With new SimCoders Reality Expansion Pack release for the Baron, I have found that it doesn't work with SmartCopilot because (I think) REP added so many new datarefs. I am in talks with SimCoders to see if I can get a list of theirs or find a way around this.
All in all, I will need to learn how to make a config file for SmartCopilot and I have tried googling and opening it up and trying to figure out myself but no luck. Any help would be appreciated!

I would look at an existing config file for a plane that is known to work, as well as the SmartCoPilot documentation. That should bring you up to speed on how the dataref syncing works.
Also, you can try the dataref viewer plugin (free) to see if SimCoder are publishing their refs. If so, they'll show up in the dataref viewer. If not, then hunting through the LUA files (if there are any) might reveal them.
