Only thing I can think of is that you're hitting a VRAM limitation when it loads the additional visual models as you encounter them. What is your VRAM usage as reported by xplane in the grahpics settings when you're offline (or at midway)?
Try reducing your texture resolution in your XP graphics settings (I believe it requires a restart). As an extreme measure, bring it down to just one or two levels from the bottom (assuming it's quite high now), understanding that you might be able to go higher without a performance hit, but this way will be faster.
So, in summary, go back to Socal (LAX, SNA, etc) with reduced texture resolution settings in xplane and see if the frame rate remains more consistent. There's nothing that PilotEdge does internally which should reduce frame rates, the only thing I can think of is that when it asks the sim to draw the objects, the textures aren't fitting into the available VRAM on the video card, so it's swapping textures from system RAM to the video card VRAM, which is a death sentence for frame rates.
