Are you able to fly into the western coverage area from outside of that area or vice versa? For example IAH-DEN / DEN-IAH. I'm guessing flying out of the coverage zone would be easy and once you are handed off to a center without coverage you are on your own. But when flying into, assuming this is possible, at what point would you get clearance and when would you know to tune into the center frequency when within the coverage area? I'm just curious as to how that works if possible.

You'd want to contact the relevant center at the ARTCC boundary as depicted on a how or low enroute IFR chart. It's likely in your case that you'll want to locate the Houston ARTCC and Albuquerque Center boundary.
