Just did my flight planning in Foreflight for this rating and it shows a 1 hour and 48 minute flight time.
Couldn't you all offer the option of KSNA as a destination... or even KSAN?
Puttering along for 2 hours isn't my idea of a great time and I think the option for a shorter trip should be available as SID/STAR procedures are the real test; not cross country flying.
Just my two cents....

The problem is that TEC routes exist between your options.

Paul, as Marcus pointed out, it's challenging to find short range flights that mandate the use of a SID and a STAR.
Perhaps consider using the long XC flight as an opportunity to bolster your instrument scan using a combination of panel-only views (simulating IMC), not using the autopilot, or even going partial panel?

Hello Paul,
suggestion: Many controllers approve 2x and 4x flight when requested. That could cut the flight time down to 20-40 minutes.
