Does anybody know if its possible to remove the yoke while in Virtual Cockpit in FSX like Keith does in XPlane while doing his training videos?

Depends on the aircraft. Some you can mouse over either the yoke or the stem until the hand icon pops up and click it away. I don't think the default aircraft allow this, but I know my Carenado ones do. Also check under the toolbar up top. I think under views or panels (I'm at work and can't remember exactly) and sometimes you will see yoke with a check mark next to it, uncheck that.
