I noticed that even though I had declared 3 aircraft in my "Aircraft & Situations" option in X-plane, a lot more aircraft were visible to me in the air and on ground. I understand from this that the number you declare in "Aircraft & Situations" is only affecting TCAS sensitivity while the PilotEdge plugin controls how many aircraft you can see around you? Is this correct?

That's absolutely correct. The airplanes that you see around you are not 'airplanes' in the xplane sense. The might just as well be trees or buildings...they're just 3d objects being drawn by the plugin that happen to resemble an airplane.
