Video Capture Options (X-Plane + SimAVIO)

I was wondering if anyone here has been able to successfully capture X-Plane and SimAVIO (or Touch Trainer) video while flying on PilotEdge? I've tried several options, including Fraps, NVidia's ShadowPlay, and Open Broadcaster Software (OBS), but have not had much luck in capturing a video that actually gets both screens, as well as the audio correctly.

I was able to record my flight the other day with the same setup using OBS. I created a profile with a custom resolution of 3840x2160 to fit both screens and downscaled it to 1920x1080. I set up a source for each monitor, centered them horizontally, and sent the panel monitor to the bottom. My PE audio is running through the speakers. The aspect ratio is obviously not ideal, but it works.
