I just starting using PE a couple days ago and it worked fine however last night and today the audio has been cutting out every few words and its impossible to fly due to that. Any suggestions? Is it just the amount of people online or could it be a problem on my side?

Try listening to the audio recordings for the time you were flying, how do they sound? I would start with that. I haven't had heard any reports of this from the controllers today or yesterday.
