With multiple Center frequencies, when flying from a non covered ATC area into a covered ATC area - which Center frequency should be used? This may be shown on maps somewhere, however I've yet to find it.

Take a close look at a low or high enroute chart, look for the small blue box that looks like a postage stamp.
