This is one of those cases where the situation you encounter where flying offline is a distraction, and is not realistic. There is a noticeable trend of people 'practicing offline' before flying online. I understand the instinct, but ultimately, it can be more confusing than helpful in some cases where ATC's presence would result in a very different outcome (ie, being vectored prior to the last fix).
The same trend is true for people practicing V-x and I-x ratings offline. In many cases, you really can't simulate the flight accurately without ATC.
FWIW, the only time I fire up the sim and fly offline is to test a specific feature of the simulator where I want to get in the sim, put the plane in the air, and be done in 30 secs or less before shutting the sim down again.
