Hello everyone. I have my PPL and am looking forward to using X-Plane and PE to dive into IFR training (I-1 rating in my sights...). I viewed all of the PE workshops in a fairly short time frame (great stuff, BTW) and I think this may have been addressed in there somewhere, but I don't remember which video...
Anyway, my question is regarding IFR flight from a non-towered airport that is IMC (no option to take off VFR and pickup the clearance in the air). In the RW I believe I would call FSS by phone to pick up my clearance. How should this scenario be handled on PE? I really try to model reality as closely as possible with my procedures when I'm simming, but I'm guessing there's a work-around I should use here.

The I-7 rating covers this. Since there is no FSS support, contact Approach on the published frequency. You should be able to reach them from the ground at your desired airport.
