I don't get the answer to the first question. I thought we should always depart the traffic pattern AWAY from the airport (making a left turn, in this case); turning right would make us cross the final approach leg of nearby runways. ??

So if I understand correctly, for a left pattern, you should always depart the downwind leg to the left ... ? and a right pattern to the right?

The question assumes that you are using runway 35R (with 35R and 35L active), so a right-hand pattern makes you stay clear of 35L. You can also see on the detail of the chart that right-hand patterns need to be flown on the right side runways (RP 9R, 17R, 27R, 35R).
